1/2 cup butter
1/2 cup sugar
1/2 molasses
1 egg yolk
2 cups sifted flour
1/2 tsp. salt
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
1 tsp. ground cloves
1 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. allspice
1/2 tsp. nutmeg
1/2 tsp. allspice
Preheat oven to 350*
In a large bowl, cream the butter with the sugar until smooth. Beat in the molasses and egg yolk. In another bowl, sift together the flour, salt, baking powder, baking soda, and spices. Gradually beat the flour mixture into the butter-egg mixture. Cover and chill the dough for at least one hour.
On a lightly floured board, rool the dough to a 1/4-inch thickness. (Actually, I think we ended up doing 1/8-inch thick.) Cut into gingerbread men or desired shapes. Place cookies about 2 inches apart on an ungreased cookie sheet. Bake for 8 to 10 minutes. Cool on sheet for a few minutes before removing to a wire rack. Decorate when thoroughly cooled.
Yield: 3 dozen
Royal Icing
1 lg. egg white
1 cup powdered sugar
1/2 tsp. lemon extract
Beat all ingredients with an electric mixer for 6 to 8 minutes until icing is thick and holds its shape. If needed, add more powdered sugar. Pipe onto cookies using a pastry bag and decorator tube. Allow icing to dry before stacking.

We just got your Christmas letter today in the mail, and it was so fun to see what y'all had been up to this year! When I saw in your letter you had a blog I just knew I had to check it out, and it was fun reading all the posts, and seeing pics of y'all. Your letter made me think of the fun times we've had together through both knowing the Kangases, and wish we could see you again sometime soon! A huge congratulations to Stephanie by the way! That is so.... incredible! What an honor, and acomplishment! Praise the Lord for His goodness to her! Well hopefully I will be keeping up with y'all through your blog now! No, we haven't moved...still live in the same house. But, we are close enough to farm/woodland that we do have foxes, coyote, etc. around the area.

Sorry it's taken me so long to get back to you! Our computer was acting up that day, and so I didn't even know if my comment had gotten through to you! Thanks for replying! It was great to hear from you to! Abi is loving married life! Though we sure do miss her as she does us! She got a gem though, and we are all so happy for her! They visit us quite often on the weekends, and sometimes some of us will go down there for the weekend to, so it is nice that we still get to see her quite often! Me, and mom are hopefully coming to visit Aunt Pat, and the cousin's for mom's birthday the weekend of the 24th this month, so... we'll see! By the way, I loved your last couple of posts! They're great! You're doing a wonderful job with the blog!
